The burbot is a freshwater member of the cod-like fishes. It has an elongated, marbled body and a single chin barbel. It inhabits cold, well-oxygenated rivers and lakes.

It feeds chiefly in the evening and at night. Adults catch fish, while younger animals use invertebrates more often. It breeds in winter, below around six degrees Celsius, when many other fish reduce activity.
